Chouriço is a traditional Portuguese pork sausage with a lightly smoky flavour. The best way to enjoy it is as chouriço assado, grilled over an open flame. More than a simple dish, it is a true Portuguese culinary experience.

When you order chouriço assado in a restaurant, the server brings the sausage to your table in a terracotta grill filled with aguardente. The aguardente is then ignited right before you. Once on the table, you can grill the chouriço to your preferred level of doneness. For a perfect chouriço assado, the outside should be slightly charred and deliciously crisp.
