Once quite common, sardine roe, also known as "Portuguese caviar," has become a very rare and highly sought-after product. Sardine roe is only produced during the months of November, December, and sometimes January.
The manufacturing process requires intensive and meticulous labor. Only canneries that still work in an artisanal way, like La Gondola, are able to produce it.
